Broccoli Salad from William Rindahl, chef at Midi’s Restaurant
Ingredients

large bunch
broccoli
broken into florets
1
red onion
diced
1
lb
bacon
8
oz
shredded cheese
1
cup
vinegar
1
cup
sugar
1
cup
mayonnaise
Instructions
Place broccoli and onion into mixing bowl. Fry bacon thoroughly – break into pieces once cooked. Pour bacon and grease over broccoli.
Add sugar and vinegar. Cool completely. Sir in cheddar and mayonnaise.
